Gluten free in the corn fields.

I will start by introducing myself: I am a 22 year-old almost college graduate (at this point there are only 2 months left til graduation), and I have been gluten-free since October of this year. I used to subsist on ramen noodles, beer and Jimmy John's. My diet was restricted after I managed to contact pneumonia and mono at the same time, and while they were at it they ran almost every blood test possible, and I found out that I am allergic to gluten. (My mom had recently stopped eating gluten and soy because they mess with your thyroid, so at least I had some support).

I mourned the end of my days of beer and a steak. And then I had my mom cook for me at home. She made me enough food packed in indivudal servings for a month. I have been cooking (almost) all of my meals since then, and have had to get creative, since I was the girl who baked everyone a cake on their birthday and had holiday themed cookies every holiday.

So, basically contained in this blog will be my adventures in cooking and shopping, as can only be had by a poor, starving college student who dearly misses her ramen, but has found her beer.

it's so nice to hear from other people on my blog! I just started it as a class project, but it's really helping me! I just found out in August too that I couldn't eat gluten anymore! and yea all my friends are pretty supportive, but they still make fun of me when I buy rice cakes. Even more so, they make fun of me when I use those rice cakes in lieu of bread. Thanks for the comment!
